I have watched Mammy Brady make this for years and she gladly past it on to me years ago, and I have successfully made it many times, it is really quite easy. The method above however is a lot different to my Mums, she does not add butter, flour, baking powder nor milk, (we are shocking tight in Cavan) and when the boxty balls are formed they are placed on a plate, then the plate is placed into a saucepan of boiling water for approx 45 mins, then left to cool and refrigerate. My mum also makes gorgeous Potatoe Bread, Wheaten Bread and her Soda bread is to die for, and her apple tarts aren't have bad either. I have all her recipes if you ever want them.
